The Terrorists are blessed with lots of very generous friends, godparents and relatives who all spoil them rotten at every opportunity. Many of them don’t have children of their own so I often struggle to find ways to reciprocate their kindness. This Easter, however, I think it is fair to say we may have solved the problem.
Last weekend my The Bear, Bollie, and I had a fantastic afternoon making all of the special people in our lives homemade Easter Cupcakes.
The cupcakes were a basic recipe (see below) and my son enjoyed every second of weighing out, sieving and mixing the ingredients and then spooning the mixture into the little Easter themed cases (a bargain from Poundland).
Once they had cooked and cooled we then spent another happy half hour armed with buttercream icing, Easter decorations (a mixture of those in the Poundland pack and some left over from Waitrose last year) and Cadbury’s mini eggs. As an after dinner treat (in exchange for trying salmon!) both The Bear and Bollie were allowed to decorate one each for themselves and eat it for their pudding (I find that this is the best way to ensure the rest are actually decorated without too much sneaky icing licking and chocolate egg thieving!)
Finally we spent a fun hour with Easter stickers from (Yellow Moon) decorating little polythene bags (from amazon) for each lucky recipient. Queue much discussion over who should receive each one and who was considered (in the eyes of a 3 year old!) to be worthy enough!
All in all a great afternoon, a lovely, personal, way of giving a little something back to all of our generous friends and hopefully a little lesson to my kids on how sometimes giving can be as much fun as receiving (though I would be lying if I pretended this was The Bear’s biggest takeaway – Me – “what was the best bit of making everyone cakes”, The Bear – “licking the bowl Mummy and the icing bit”!)
100g self-raising flour
100g very soft butter or margerine
100g caster sugar
2 large eggs
Mix all ingredients together in a bowl or blender and divide between 10 cupcake cases. Bake in a 180oC (160oC for fan) oven for 20mins
For icing combine 70g very soft butter, 60g icing sugar and a couple of drops of yellow food colouring
